Monthly Recipe

Coconut curry shrimp over glass noodles

1 pound shirmp
2 tablespoon garlic
1 shallot bulb
1/2 cup red or yellow bell pepper

1 tablespoon curry powder
1 tablespoon coconut sugar
1 tablespoon fish sauce
2 tablespoon fresh basil
1 fresh coconut (can coconut milk if fresh not available)

Combine all ingredients in a bowl and mix well.  
Form into round patties (approximately 6-8 patties).
 

Cooking Options:
Pan sear: Heat 1 teaspoon avocado oil in small pan.  Cook 3-4 minutes on each side on medium heat.

Air fry: Cook on 350 degrees for 12 minutes.  Time could vary based on air fryer.
Bake:  Spray baking pan with light cooking spray.  Cook at 350 degrees for 25 minutes.
 
Yogurt Dip
1/2 cup plain greek yogurt
1 1/2 tablespoon lime juice
1 1/2 tablespoon fresh chopped cilantro 
Combine all ingredients in a small mixing bowl.  Serve cold on the side.
